Instructions
Marinade
Bring thawed steaks to room temperature on the counter for about 20 minutes.
Combine tomatillo salsa, cilantro, lime juice, garlic, salt, and pepper in a small bowl.
Pour marinade into resealable bag and add thawed steaks; marinate in refrigerator for at least 15 minutes or up to 2 hours, turning bag halfway through to evenly coat steaks.
Avocado Salsa
Combine tomatillo salsa, avocado, cilantro, onion, lime juice, garlic, and salt in a medium bowl, then set aside and keep cool until plating.
Carnitas-Style Grilled Steak Tacos
Remove steaks from bag and discard remaining marinade.
Preheat grill to medium, add steaks, and cover. Grill 10 to 14 minutes, turning once, or until temperature reaches 130 degrees Fahrenheit, as per a meat thermometer, for medium-rare doneness. Once doneness is achieved, allow steaks to rest and keep warm until slicing. For a different desired doneness, refer to our helpful Steak Cooking Chart.
While steaks rest, place tortillas on grill until warm and slightly charred.
Plating: Carve steaks into evenly divided slices, place in tortillas with avocado salsa, and top with onion, cilantro, and lime wedges, as desired.
