Ingredients

  • 4 Omaha Steaks Air-Chilled Chicken Leg Quarters thawed
  • 1 1/2 lbs. baby red potatoes, halved
  • 3 medium shallots, sliced
  • 3 garlic cloves, thinly sliced
  • 2 teaspoons oregano
  • 2 teaspoons smoked paprika
  • Salt
  • Pepper
  • 3 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 lemon, sliced into wedges

Instructions

  • Preheat oven to 400 degrees Fahrenheit. Toss together potatoes, shallots, garlic, oregano, smoked paprika, salt, pepper, olive oil, and lemon juice on large baking sheet; roast for 25 minutes while you prepare the chicken.
  • Drizzle chicken with olive oil and lemon juice and season with salt and pepper.
  • Transfer chicken and lemon wedges to baking sheet; roast for an additional 30 to 40 minutes, until potatoes and chicken are cooked throughout.
