Whiskey Marinated Holiday Roast Recipe

Chateaubriand or Prime Rib?
This is a universal roast recipe that will work on several cuts. The choice is yours whether you pick a roast size filet mignon (the Chateaubriand) or a buttery rich prime rib roast. The chateaubriand has a mild delicate beef flavor and incredible tenderness. It works well with rich sauces, like this butcher’s butter recipe or sweet red pepper cranberry sauce.
If you prefer buttery, rich ribeye flavors, choose a Bone-in Frenched Prime Rib Roast. Whiskey marinade
Our roasts are aged a minimum of 28 days for maximum tenderness and flavor concentration. This simple marinade with only four ingredients – whiskey, baking soda, water, and your roast – will result in an even more tender roast. This mixture may seem odd, but it will create incredible results. The baking soda and alcohol mixture alkalizes the meat’s surface, making it harder for proteins to bond. This keeps your roasts from losing liquid during the cooking process, resulting in a more tender and juicier roast.
Just mix the marinade ingredients in a large plastic bag, then add your roast, making sure to massage the marinade into the meat. You only need to marinade for your roast for 30 minutes for amazing results. After marinating, season generously with Omaha Steaks Private Reserve Rub and let sit 12-18 hours in a roasting pan with an elevated baking rack in the refrigerator.
Tips for cooking the roast
This recipe is easy to execute, but you will need a little pre-planning. Your roast will need to be completely thawed for best results. Then you will marinate and seasoned 12-24 hours before you plan to cook it.
Cook your roast according to the directions in this recipe. The best way to judge the doneness of your roast is with a high-quality meat thermometer. Whiskey Marinated Holiday Roast
Ingredients
Marinade:
- 4 oz. water
- 2 oz. whiskey
- ¼ tsp baking soda
Instructions
2 lb. Chateaubriand
- Thaw roast completely in the refrigerator before cooking; allow 48-72 hours.
- Mix together marinade ingredients and place into a large resealable bag. Place roast in bag and marinate in the refrigerator for 30 minutes.
- Remove roast from marinade. Discard marinade.
- Season the roast with the Omaha Steaks Private Reserve® Rub 12 - 18 hours in advance and leave uncovered in refrigerator overnight. When ready to cook preheat the oven to 225°F. Place the roast on an elevated rack in a roasting pan.
- Roast for 2 hours at 225° or to an internal temp between 120°F to 125°F.
- Let roast rest for 30 to 45 minutes.
- Broil on high 2 inches from the broiler, 4 minutes on one side, 2 minutes on the other side or until a delicious brown crust uniformly covers your roast.
4 lb. Bone-In Frenched Prime Rib Roast
- Thaw roast completely in the refrigerator before cooking; allow 48-72 hours.
- Mix together marinade ingredients and place into a large resealable bag. Place roast in bag and marinate in the refrigerator for 45 minutes.
- Remove roast from marinade. Discard marinade.
- Season the roast with Omaha Steaks Private Reserveˊ Rub 12 - 18 hours in advance and leave uncovered in refrigerator overnight. When ready to cook preheat the oven to 225°F. Place the roast on an elevated rack in a roasting pan.
- Roast for 3 hours and 15 minutes at 225° or to an internal temp between 120°F to 125°F.
- Let roast rest for 30 to 45 minutes.
- Broil on high 2 inches from the broiler, 4 minutes on one side, 2 minutes on the other side or until a delicious brown crust uniformly covers your roast.
