How to Make The Southerner Smash Burger  

There are many smash burger recipes, but this one outshines them all. Why? It features Omaha Steaks Smash Burgers! Made from premium aged beef that delivers a juicy burger experience, the best part of these patties is they go from freezer to grill to bun in just five minutes flat – no thawing needed! That’s right: no griddle is required because these smash burgers are Built for the Grill™.

1. Say “Cheese!” Pimiento Style

Pimiento cheese is the perfect topping for your smash burgers! Tangy, rich, smoky flavor perfectly complements the juicy patty. Combine cheddar cheese, pimientos, cream cheese, mayonnaise, Worcestershire sauce, smoked paprika, garlic powder, onion powder, kosher salt, pepper, and hot sauce in a medium-sized bowl and stir until well mixed. Season to taste with additional salt and pepper if needed. Then, set off to the side until the end.

2. Get Your Crunch on With Tangy Fried Green Tomatoes

One of the standout features of these smash burgers is the crispy fried green tomatoes! Let’s start with the seasoned flour: in a small bowl, combine the flour, kosher salt, and black pepper, whisking until fully incorporated. Next up: the egg wash! Whisk together eggs and water in another bowl. Finally, for the breading, combine Italian breadcrumbs, kosher salt, black pepper, garlic powder, onion powder, and paprika in a small bowl, whisking until thoroughly mixed.  

Now that the coating is set, slice the green tomatoes into half-inch thick slices and season them to taste with salt and pepper. Line up the bowls and repeat this process for each tomato: Coat both sides with flour, shaking off the excess, dip them in the egg wash, and then coat both sides with the breading.

It’s time to fry! Pre-heat grill to 400 degrees Fahrenheit, and place medium-sized cast iron past on the grill, pour vegetable oil .  Heat oil for about 90 seconds to two minutes, until temperature of oil  is 375 degrees. Shallow-fry the tomatoes on each side for about 60 to 90 seconds until golden brown. Once done, place them on a paper towel-lined plate to drain and set aside

3. Fire Up the Grill: It’s Burger Time

Let’s get cooking with the star of the show: Omaha Steaks Smash Burgers! These burgers are built for the grill and don’t even need to be thawed. Keep grill preheated at 400 degrees Fahrenheit. Place the frozen patties directly on the grill and cook for three minutes, then lightly season with salt and pepper on one side only before flipping. Add a slice of American cheese to each patty and grill for another two minutes until the burgers are cooked and cheese is melted. Remove from the grill.  

While the burgers cook, spread mayonnaise on the bottom half of each bun and toast them on the grill for 30-45 seconds until golden brown.

Now it’s time to assemble your burgers! Place the two smash burgers on the bottom bun and top with a fried green tomato and a generous spoonful of pimiento cheese. Finish with the top bun and dig in!

Ingredients

Pimiento Cheese

  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup pimientos, small diced
  • 4 oz. cream cheese, room temperature
  • 1/2 cup mayonnaise
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon kosher salt
  • 1/8 black pepper
  • 3 dashes hot sauce

Seasoned Flour

  • 1/4 cup flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Egg Wash

  • 2 eggs
  • 1 teaspoon water

Breading

  • 1/2 cup Italian bread crumbs
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon paprika

Fried Green Tomatoes

  • 1 large green tomato
  • Seasoned flour
  • Egg wash
  • Breading
  • 1/2 cup vegetable oil
  • Salt
  • Pepper

Cheeseburger

Instructions

Pimiento Cheese

  • Place all ingredients in a medium-sized bowl and stir until well incorporated.
  • Season to taste with additional salt and pepper if needed.

Seasoned Flour

  • Place all ingredients in a small bowl and whisk together until fully incorporated.

Egg Wash

  • Place all ingredients in a small bowl and whisk until fully incorporated.

Breading

  • Place all ingredients in a small bowl and whisk until fully incorporated.

Fried Green Tomatoes

  • Preheat grill to 400 degrees Fahrenheit with direct heat.
  • Slice green tomatoes into 1/2"-thick slices crosswise, then lightly season both sides with salt and pepper.
  • Coat both sides of each tomato with flour, shaking off the excess. Dip in egg wash on both sides, then coat with breading on both sides. Set each slice on a medium plate.
  • Pour vegetable oil (about 1/2" depth) into a medium-sized cast iron pan. Heat the oil for 90 seconds to 2 minutes until it reaches 375 degrees Fahrenheit, as per a meat thermometer.
  • Shallow-fry tomatoes on each side for about 60 to 90 seconds until golden brown.
  • Remove the slices and place them on a paper towel-lined plate to drain excess oil.

Cheeseburger

  • Keep grill at preheated 400 degrees Fahrenheit with direct heat.
  • Place frozen burger patties on the grill and cook for 3 minutes, then lightly season one side with salt and pepper.
  • Flip the burgers and add a slice of American cheese to each patty.
  • Continue cooking for another 2 minutes, until the burger cooks through and the cheese melts.
  • Spread mayonnaise on half of the burger bun and toast on the grill for 30 to 45 seconds until golden brown.
  • Plating: Place the two cheeseburgers on the bottom bun. Top with one fried green tomato, then a heaping spoonful of pimiento cheese, and finish with the top bun.
