Grilled Marinated Swordfish topped with a Fresh Mango Salsa

Servings: 4

Ingredients

  • 4 Swordfish Steaks
  • 1 cup olive oil
  • 2 tsp. garlic fresh, chopped
  • 1 lime juiced
  • 1 Tbsp. cilantro chopped
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • Fresh mango salsa (recipe below)

Fresh Mango Salsa:

  • 2 cups fresh mango peeled, seeded, and diced 1/4"
  • 1/4 cup red onion diced 1/8"
  • 1 Tbsp. cilantro finely chopped
  • 1 Tbsp. jalapeno pepper seeded and minced
  • 2 Tbsp. red bell peppers diced 1/8"
  • 1 Tbsp. fresh lime juice

Instructions

  • Combine Olive oil, garlic, lime juice, cilantro, salt and pepper.
  • Pour marinate over Swordfish steaks and let marinate overnight in the fridge.
  • Cook swordfish over hot mesquite.
  • Top with Fresh Mango Salsa and serve.

Fresh Mango Salsa

  • Combine all ingredients in a mixing bowl.
