Garlic Parmesan Chicken Wings with Jalapeño Ranch Dressing

Working as a chef in Atlanta for the last 18 years, you can say I know a little bit about chicken wings. After all, Atlanta is considered the “wing capital” of America. It’s my go-to snack for gameday and today on the menu we’re making one of my favorites – garlic parmesan wings. You have to something to dip it in, so I’m pairing these flavorful fried chicken wings with a tangy jalapeño ranch dressing.
Making Garlic Parmesan Chicken Wings
Omaha Steaks has really great, fully cooked, pre-seasoned chicken wings with an incredible smoke flavor. To make garlic parmesan wings, toss the wings in flour, buttermilk, seasoned flour, and corn starch for that extra crunch. Fry until golden brown and then add garlic butter, parmesan cheese, and parsley. Dip in jalapeño ranch dressing for a chicken wing experience that will have you begging for more. I bet you can’t have just one!
Garlic Parmesan Chicken Wings with Jalapeño Ranch
Ingredients
Seasoned flour
- 1 ½ cups all-purpose flour
- ¼ cup corn starch
- 1 T. salt
- ½ tsp. black pepper
- ¼ tsp. white pepper
- ½ tsp. smoked paprika
- 1 tsp. garlic powder
- ½ tsp. onion powder
Ranch dressing
- ½ cup mayonnaise
- ½ cup sour cream
- ½ cup buttermilk
- 2 T. minced fresh chives
- ½ tsp. onion powder
- ½ tsp. garlic powder
- ½ tsp. kosher salt
- ½ tsp. black pepper
- 1 T. fresh lemon juice
- 2 charred jalapeños seeded
Garlic butter
- 4 oz. unsalted butter
- 4 garlic cloves minced
- Salt and freshly ground black pepper
Garlic Parmesan Wings
- 2 16 oz. packages Omaha Steaks fully cooked chicken wings
- ½ cup all-purpose flour
- ½ cup buttermilk
- Seasoned flour recipe above
- 2 T. Italian parsley chopped
- ¼ cup grated Parmesan cheese
- Vegetable oil
- Kosher salt
Instructions
Seasoned Flour
- Combine all ingredients into a medium-sized bowl and whisk until well incorporated.
Ranch Dressing
- Combine all ingredients in a food processor and season to taste once done.
Garlic Butter
- Bring a medium-sized pan to medium-low heat and slowly simmer butter and garlic about 5 to 7 minutes. Season to taste.
Garlic Parmesan Wings
- In a large Dutch oven or cast-iron pan, heat about 3” of vegetable oil to medium-high heat, until oil reaches 350 degrees F.
- Prepare three separate bowls: one with all-purpose flour, one with buttermilk, and one with seasoned flour. Dip chicken wings in all-purpose flour, then in buttermilk, and then in seasoned flour.
- Fry wings in small batches until golden brown and warmed throughout, about 5 to 7 minutes.
- Once chicken wings are done, place on wire rack and lightly season with kosher salt.
- In a large bowl, place cooked wings, garlic butter, Parmesan cheese and Italian parsley; toss lightly until well coated.
- Finish plate by sprinkling more Parmesan on top wings.
