Blackened Shrimp and Farfalle Pasta, Roasted Peppers, and Feta Cheese
Ingredients
- 16 oz. Omaha Steaks Wild Argentinian Red Shrimp
- 10 oz. dry farfalle bowtie pasta
- 4 tablespoons olive oil, divided
- 1 cup of chopped roasted red peppers
- 1 cup of crumbled feta cheese
- Juice of 1/2 a whole lemon
- 1/4 cup of fresh grated parmesan cheese
- 2 teaspoons chopped Italian parsley
- 5 teaspoons blackening seasoning
Instructions
- Toss defrosted shrimp in 2 tablespoons of olive oil and then season with blackening seasoning 30 minutes prior to cooking.
- Cook farfalle pasta as per packaging directions.
- Preheat a large non-stick sauté pan with 2 tablespoons of olive oil over medium-to-high heat.
- Add the shrimp and cook for 3-4 minutes, or until shrimp are opaque and reach a minimum internal temperature of 140 degrees Fahrenheit, continuously stirring to prevent burning.
- Add cooked pasta, roasted red peppers, crumbled feta cheese, and lemon juice and toss until fully incorporated.
- Divide between 4 bowls and top with grated parmesan and chopped parsley.
