How to Make Bacon Black ‘n Bleu Cheese Sliders With Crispy Onion Straws

This mega-sized bacon is cured and smoked the old-fashioned way and is the perfect complement to an exclusive burger made from buttery and rich Omaha Steaks Ribeyes, delivering a burger experience you literally can’t get anywhere else!

1. Crisp Up Some Straws With Layers of Flavor

Making your own onion straws is easier than you think! Start by whisking your creamy buttermilk and fiery hot sauce together in a large bowl until they’re well incorporated, then add your mild yellow onions, toss it all together until gloriously coated, and allow it to sit for 5 minutes. In the downtime, whisk together your flour, kosher salt, black pepper, mild garlic powder, zesty onion powder, and smoky paprika in a separate large bowl until everything is well incorporated.

Next, add vegetable oil to a large saucepan until it’s half an inch deep, then bring it to medium-high heat. Now you’re ready to get cooking! Batter 1/4 of your coated onions in the seasoned flour, toss until they’re coated with the dry mixture, and shake off any excess flour. Separate the onions and fry them in vegetable oil for about 45 seconds to 1 minute until they’ve reached a mouthwatering golden-brown color. Then drain and remove the crispy onions from the oil and put them on a paper-towel-lined plate before lightly sprinkling them with salt. Repeat these same steps for more batches until all your onions are cooked!

2. Come to the Dark Side With This Blackened Seasoning

One of the biggest things that sets these burgers apart from the rest of the pack is the homemade blackened seasoning – and it couldn’t be any easier to make! Simply add kosher salt, black pepper, earthy Italian seasoning, sweet paprika, concentrated garlic powder, sharp onion powder, and slightly hot cayenne pepper to a small bowl and whisk until they’re all fully incorporated – that’s it!

3. It Ain’t Easy Being Bleu Cheesy

Whether you spell it “b-l-e-u” or “b-l-u-e,” there’s no question this bleu-cheese sauce is d-e-l-i-c-i-o-u-s! First, start by adding your sweet heavy cream to a small saucepan and bringing it to a boil. Next, reduce it to medium heat and whisk in your tangy bleu cheese crumbles, umami-packed Worcestershire sauce, fiery hot sauce, onion-like chives, and a pinch of salt and pepper. Cook that mixture for about 5 minutes, or until it’s thickened into an ooey-gooey cheese-sauce-like consistency, and then season to taste with more salt and pepper. Set aside until you’re ready to plate!

4. Bacon: The Sixth Food Group

If there’s one thing we can all agree on, it’s that bacon makes everything better! Crisp yourself up some delicious slices by preheating the oven to 375 degrees Fahrenheit to prep it for the thick and juicy Omaha Steaks Applewood Smoked Steak-Cut Bacon you thawed in the refrigerator overnight. While the oven preheats, cut each bacon slice in half widthwise, then place them on a wire rack or an aluminum-foil-lined baking sheet. Now all you have to do is cook them for about 20 to 25 minutes until they’re crispy and ready to be devoured!

5. Get Your Burg On

After all this amazing prep work, the time has finally come to cook up an epic burger worthy of these next-level toppings! Once your Omaha Steaks PureGround Ribeye Burgers are thawed in the refrigerator overnight, split each of the 4 burger patties in half and re-form them into 8 slider-sized patties that should be about 1-inch thick. Pat these sliders dry on all sides with paper towels and generously season them all over with your homemade blackened seasoning before allowing them to sit at room temperature for 10 minutes.

Once they’ve come to room temperature, add high-smoke-point grapeseed oil to a large cast-iron pan and bring it to medium-high heat. Add 4 of your sliders to the pan and cook them for 3 minutes on one side, then flip and continue to cook them until they’ve reached your desired doneness as per a meat thermometer. While your sliders are cooking, let’s get the buns ready for plating! Simply bring a separate large pan to medium-high heat and spread a 1/2 tablespoon of creamy mayonnaise on each half of the slider buns, then toast them in the pan for about 30 to 45 seconds, or until they’re perfectly golden brown! To assemble this decadent burger, start by placing a slider on the bottom bun, then crisscross 2 halved bacon slices and add a heaping spoonful of your cheese sauce, about a tablespoon of bleu cheese crumbles for texture, and a small handful of those mouthwatering crispy onion straws before topping it all with the toasted top bun. Ingredients

Crispy Onion Straws

  • 1 large yellow onion, halved and thinly sliced
  • 1 cup buttermilk
  • 1/2 teaspoon hot sauce
  • 2 cups all-purpose flour

  • 2 teaspoons black pepper

  • 1/2 teaspoon cayenne pepper

Bleu Cheese Sauce

  • 1 1/2 cups heavy cream
  • 1/2 cup bleu cheese crumbles
  • 1 teaspoon Worcestershire sauce
  • 1 dash hot sauce
  • 2 tablespoons freshly minced chives
  • Salt
  • Pepper

Instructions

Crispy Onion Straws

  • In a large bowl, whisk buttermilk and hot sauce together until well incorporated, then add onions and toss until well-coated; allow to sit for 5 minutes.
  • In a separate large bowl, whisk together all dry ingredients until well incorporated.
  • In a large saucepan, add vegetable oil until 1/2” deep and bring to medium-high heat.
  • Batter 1/4 of onions in seasoned flour, toss until coated, and shake off excess flour; separate onions and fry in vegetable oil for about 45 seconds to 1 minute until golden brown.
  • Drain and remove crispy onions from oil and place on paper-towel-lined plate and lightly sprinkle with salt. Repeat steps for 3 more batches.

Blackened Seasoning

  • Add all seasonings to a small bowl and whisk together until fully incorporated.

Bleu Cheese Sauce

  • In a small saucepan, add heavy cream and bring to a boil.

  • Cook for about 5 minutes until thickened to cheese-sauce-like consistency.
  • Season to taste if needed with salt and pepper.

  • Add 4 sliders to pan and cook 3 minutes on one side, flip, and continue to cook until desired doneness as per a meat thermometer; repeat process for remaining 4 sliders.
  • Bring a separate large pan to medium-high heat.
  • Spread 1/2 tablespoon mayonnaise on each half of slider buns and toast in pan about 30 to 45 seconds, until buns are golden brown.
  • Assembly: Place slider on bottom bun, crisscross 2 halved bacon slices and add a heaping spoonful of cheese sauce, about a tablespoon of bleu cheese crumbles, and a small handful of crispy onion straws and top with top bun.
