The use of dry heat to cook a steak is like grilling, except the heat comes from above versus below the meat. How to broil a steak in the oven:
- Prep steaks

How to broil a steak
Thaw steaks completely using the quick-thaw method or overnight in the refrigerator. Once thawed, pat steaks dry on both sides and season with coarse salt and pepper or Omaha Steaks Seasoning. You can also use the dry brine method of seasoning for a great crust and tender steak.
Set your oven to broil and set the rack 3-4″ from the heat source. Most broilers are located at the top of the oven. In some instances, the broiler may be a separate compartment under the oven. Check your oven manual for how to use the broiler on your home oven.
Place steaks on a baking pan on the uppermost rack in your oven. Your steak should be 3-4″ from the heat source for the best results.

5. Remove steaks 5 degrees below desired temp and rest 5-10 minutes
Use a meat thermometer to check doneness and remove steaks from the oven when they are 5 degrees F below your desired temperature and steak doneness. The steak will increase in temperature as it rests. Don’t skip the resting time! Tent your steak in foil and let rest 5-10 minutes to allow the juices to redistribute for a juicy, tender steak.
