Ingredients
Beef Kabobs
- 1 lb. Omaha Steaks Beef Sirloin Tips
- 1 teaspoon coarse ground black pepper
- 1 large lime, cut into 8 wedges
- 1 small red onion, cut into 8 thin wedges
- 1 10 oz. container grape or cherry tomatoes
Mojo Sauce
- 1/4 cup fresh orange juice
- 1/4 cup fresh lime juice
- 3 tablespoons fresh oregano, finely chopped
- 3 tablespoons olive oil
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon garlic, minced
- 3/4 teaspoon salt
Instructions
Mojo Sauce
- Combine all ingredients in small bowl and whisk until well incorporated; set aside.
Beef Kabobs
- Season thawed sirloin tips with pepper.
- Alternately thread sirloin tips with lime and onion wedges evenly onto four skewers.
- Thread tomatoes evenly onto four skewers.
- Place kabobs on grill over medium heat. Add sirloin kabobs first and grill, uncovered, about 8 to 10 minutes for medium-rare to medium doneness, as per a meat thermometer, turning occasionally.
- Add tomato kabobs and grill, uncovered, about 2 to 4 minutes or until slightly softened, turning occasionally.
- Drizzle mojo sauce over kabobs before serving.
