1. Roasted Halibut Steaks with a Lemon Garlic Herb Crust

Perfect for any night of the week, in any season, this savory and crispy halibut recipe is an extremely simple and gourmet meal. Made with our delicious Wild Halibut Fillets, this firm, mild white fish is known for its lean and delicate flavor. Light and savory with an added crispy texture, this roasted halibut recipe is the perfect combination of flavors to will satisfy all your taste buds.

Roasted Halibut with a Lemon-Garlic-Herb Crust

This simple recipe is a refreshing and zesty twist on classic roasted halibut.

Ingredients

  • 4 Omaha Steaks Wild Halibut Fillets
  • 1/4 cup mayonnaise
  • 2 cups garlic-herb croutons
  • 2 tablespoons parsley, chopped
  • 1 teaspoon sea salt
  • 3/4 cup tartar sauce
  • 4 lemon wedges
  • 4 parsley sprigs

Instructions

  • Preheat oven to 400° degrees Fahrenheit.
  • Arrange halibut fillets on foil-lined sheet pan.
  • Spread1 tablespoon of mayonnaise, followed by sprinkling 1/4 teaspoon of salt, over each fillet.
  • Sprinkle 1/4 tsp. of salt over each Halibut Steak.
  • Grind croutons in food processor until coarse.
  • Mix ground croutons with chopped parsley.
  • Top each filet with 1/2 cup of ground up garlic-herb croutons.
  • Pack breading and dredge fillets through it to thoroughly coat each fillet. 
  • Roast until breading is browned and fillets are opaque in color and have reached an internal temperature of 145 degrees Fahrenheit.
  • Squeeze a lemon wedge over each fillet and garnish with a parsley sprig before serving with a side of tartar sauce.

2. Swordfish Ceviche

  • 1 6 oz. box of 4 Omaha Steaks Swordfish Steaks thawed, skinned, and cut into 1/2" pieces
  • 1 1/2 cups fresh-squeezed lime juice
  • 1/2 teaspoon sea salt
  • 1/2 cup poblano peppers, cut into 1/4" cubes
  • 1/2 cup red bell peppers, cut into 1/4" cubes
  • 1/2 cup yellow bell pepper, cut into 1/4" cubes
  • 1/2 cup red onion, cut into 1/4" cubes
  • 1/2 cup tomatoes, diced
  • 1/2 cup corn kernels cut off the cob
  • 1/4 cup cilantro, finely chopped
  • 1/4 cup seasoned rice wine vinegar
  • 1/2 cup chili sauce

Instructions

  • In large dish, cut swordfish into 1/2-inch pieces.Combine fish and 1 cup of lime juice. Mix well and allow to marinate for 30-45 minutes in the refrigerator.
  • Drain and discard lime juice. Transfer fish to a mixing bowl.
  • Combine swordfish with remaining 1/2 cup of lime juice and remaining ingredients. Mix well and chill for 2 hours.
  • Serve chilled and finish with a drizzle of olive oil and cracked black pepper.

 

3. Grilled Ahi Tuna with Fresh Mango Salsa

Ingredients

Mango Salsa

  • 1 cup mango peeled, seeded and chopped 1/4"
  • 1/4 cup white onion chopped 1/4"
  • 1 Tbsp. cilantro chopped fine
  • 1 Tbsp. lime juice fresh squeezed
  • 2 tsp. jalapeños minced fine
  • 2 Tbsp. red bell peppers seeded and 1/4" dice
  • 1/4 tsp. sea salt

Instructions

  • Prepare the fresh Mango Salsa by following the recipe below.
  • Season and grill the Ahi Tuna Steaks to desired doneness.
  • Top each steak with generous scoop of the fresh Mango Salsa.

Mango Salsa

  • Combine all ingredients in a mixing bowl and mix well.
